~ Mom's Recipe For Gluten Free Pancakes~
(Contains G.F. Oats Which you Could Omit If you Prefer, Replace with a scant more Rice Flour or Sorghum Flour)
1 Cup G.F. Oats
1 Cup Rice Milk Vanilla
1/4 Cup Maple Sugar
1 Tsp. Gr Flax Seeds
Mix well with a fork and set aside to soak 10 -15 mins, or however long your guests can wait.
Meanwhile....Sift together
3/4 Cup Rice Flour
1/4 Cup Quinoa Flour
3/4 Cup Sorghum Flour
1/2 tsp G.F. Baking Soda
1/2 Tsp. G.F. Baking Powder
1/4 tsp salt
2 tbsp hemp seeds
Now Back to Your Oats, When time is up add....
1 Organic Egg
1Tbsp Safflower Oil
1 tsp. Pure Vanilla Extract ( Fairtrade if possible)
Whip together and mix with dry ingredients.
~ Grease small pan slightly and brown at med temp for 4-5 mins or longer if you prefer.
Try not to overcook. Serve with fresh Ontario Maple Syrup, Enjoy!! ~
